About

What is better than a backyard barbecue, surrounded by good food and great friends? We thought the same thing. Then, it became a THING… Friendly competitions, more and more friends, and honoring a tradition of Texas barbecue.

Texas SMOAK is now a competition barbecue team. Through our time and efforts, we developed a team of skilled pitmasters dedicated to bringing great food to any event. The low and slow process of cooking large cuts of meat on an offset barbecue smoker means that your food never directly touches the fire, but is cooked by the smoke of slow burning Central Texas post oak. We love oak so much, it’s even in our name!

Our team of SMOAKers initiated, from our formation, that we wanted to find ways to contribute to our community. By creating a 501(c)3 non-profit organization, we raise funds to support the community. Today we are committed to using our team earnings to provide scholarships for Central Texas high school seniors, feed and “adopt” families during the holidays, and support other non-profits and community events.

Our Food

Texas SMOAK prides itself in cooking traditional slow-smoked Texas Barbecue. In competitive events, our pitmasters usually compete in brisket, pork spare ribs, chicken, and sometimes they have some fun with beans, margaritas, and bloody mary drinks.

SMOAKers

Texas SMOAK Chief Cooks include Charles Baily, Adam Sadler, Stephen Torres, Alyaz Mohamed, and Shawn Cartwright. Assistant Cooks include Marcus Moreno, Jason Martinez, Adrian Bustillos, and Sam Ybarra.
